The Diploma in F&B Service Management is a practical, one-year qualification for students who want to work in restaurants, banquets and hotel dining rooms without first completing a longer degree.

The programme is built around the service floor. Students learn table setting and clearing, the sequence of service, order taking, carrying and presenting correctly, and how a station is run during a full sitting. Banquet work is covered separately because large-format service has its own discipline — timing, coordination with the kitchen, and the ability to serve two hundred covers without the standard slipping.

Beverage service forms a substantial part of the diploma: knowledge of what is being served, correct glassware and temperature, and responsible service. Students also cover hygiene and food safety to the standard employers expect on day one, along with the basics of billing and point-of-sale operation.

Running through all of it is the part that decides who gets hired: presence. Grooming, posture, spoken English, reading a table, and staying composed when the kitchen is late and the guest is not happy. These are practised continuously rather than taught once.
